I'm thinking about a system to monitor planting areas, and I would like to know if the camera can help me recognize trees, shrubs, and grass.

Theoretically yes. It depends on how good your training data set is and the light situation where the classification is done. Keep in mind the camera has a limited resolution.

          As @holofloh has already said.

It should be possible but will depend on the training data you feed to the image recognition model.
In theory the model needs 50+ photos of each plant you want it to recognise in order to build the training model.
